Named Italian Parmigiano Reggiano in Italian, in English and French Parmesan. Parmesan is made both from full fat and skim cow milk. It is tough, dry, salty, sharp, and aged, sold as blocks or grated. It is rich in calcium and protein, easy to digest. It's used in pastas and in sauces such as basil sauce and dried tomato sauce. As well as in salads, especially Caesar salad, Rocca salad. It is also served in some restaurants with figs and apples.
